This 8.5" Western style Chef knife is handmade from 52100 High Carbon Steel. This steel is very durable and holds an excellent edge. The chromium in the 52100 offers a bit of corrosion protection while still being fully stainless, allowing a slightly less maintenance than a normal carbon steel blade, while still developing a beautiful patina with use. The full tang blade is 3/32" thick at the spine and has a full distal taper toward the tip, and a thin edge thickness of 1 mm at a depth of 1 cm from the edge. As this blade is hand forged, I left a bit of the forge scale by the spine to show a snapshot into the life of this blade.

The Western style chef is the ideal jack of all trades chef knife for the kitchen. If you want one knife to do everything, this is the one for you. Pairing it with the Stainless Japanese Paring knife will allow you to do virtually everything you need with those 2 blades, and the high carbon steel will hold a very thin edge for a long time. In addition there is a lanyard tube in the handle so it is easy to hang up in the kitchen, and is Ferro Magnetic so it will stick to a magnet bar.

The handle construction is a full tang with a black micarta bolster and stainless pins, with G10 liners, and a gorgeous piece of stabilized Manitoba Maple Burl. The handle has been given a high polish and oiled to protect against moisture and to be as enjoyable as possible to use. 

For cleaning we recommend a rinsing the blade with water and soap and completely drying the knife with a towel. For storage it's recommend to keep in open air, as the carbon steel can rust if left in a damp environment. Check out our knife care page to see if carbon steel is right for your kitchen!

We also offer a hand tooled and stitched leather sheath for storage, custom fitted to the blade to hold it snugly and for ease of use. Note that the photos of the sheath feature a different knife, you will receive the carbon steel chef knife, but with a sheath in the style of the photos.
