This 8" Western style Chef knife is hand forged from 52100 High Carbon Steel. This steel is very durable and holds an excellent edge. The chromium in the 52100 offers a bit of corrosion protection while still being fully stainless, allowing a slightly less maintenance than a normal carbon steel blade, while still developing a beautiful patina with use.
The full tang blade is 3/32" thick at the spine and has a full distal taper toward the tip, and a thin edge which holds up well on meat and vegetables. As this blade is hand forged, I left a bit of the forge scale by the spine to show a snapshot into the life of this blade.
The Western style chef is the ideal jack of all trades chef knife for the kitchen. If you want one knife to do everything, this is the one for you. Pairing it with the Stainless Japanese Paring knife will allow you to do virtually everything you need, and the high carbon steel will hold a very thin edge for a long time, requiring minimal resharpening.
The handle features is a full tang construction for superior strength and balance. Furthermore, this handle has been carefully contoured for comfortable grip. Carefully carved finger grooves lead into the blade to allow for a very comfortable pinch grip. If you prefer to grip the handle fully, I've contoured the handle in what's known as a coke bottle shape. leaving thicker spots where the main grip is, and thinner trailing into the swell at the end of the handle. This allows for optimal comfort, but also great indexing.
For handle materials, I offer Bocote and Pau Ferro, both exotic hardwoods chosen for their resistance to moisture and unique grain. Fastened with stainless pins and G10 liners, the knife is designed for a lifetime of use.
For cleaning we recommend a rinsing the blade with water and soap and completely drying the knife with a towel. For storage it's recommend to keep in open air, as the carbon steel can rust if left in a damp environment. Check out our knife care page to see if carbon steel is right for your kitchen!
We also offer a hand tooled and stitched leather sheath for storage, custom fitted to the blade to hold it snugly and for ease of use.
