Japanese Petty Knife
The Petty knife is the perfect knife for a home kitchen with a consideration for space, but also excels at slicing and dicing fruits, vegetables, and herbs. The blade starts out at just 1.5mm and tapers to a very fine edge which makes for a very thin slicing blade. Furthermore the average weight of our petty is just under 90 grams with the weight being balanced about 1" into the handle.
The handle is a full tang construction, with a choice of exotic wood and G10 liners. Currently we offer East Indian Rosewood which has a creamy medium brown colour and great moisture prevention, or Bocote, a Central American hardwood characterized by dramatic yellow and black grain that will slowly darken with age. These woods are quite durable and although they are not dishwasher safe, a light coat of mineral oil from time to time is enough to protect them from moisture and humidity changes.
The AEBL stainless steel has been treated in a multi stage heat treatment including cryogenic hardening and several tempering stages to create a durable and corrosion resistant blade. Hardened to around 61 HRC, it'll hold up well for durable use on any endgrain or plastic cutting board.
