A Kiritsuke is a must-have for any kitchen. Similar to my Gyuto blade, this Japanese blade is designed for slicing, however the slightly taller (1.9"/44mm) height of the blade lends well to chopping and dicing while giving better knuckle clearance to larger hands. Furthermore, the finer tip allows for fine detail work. The end result is a versatile and reliable blade that will elevate every cook's experience.

My Kirisuke features a long, 9" or 230mm profile with a gently curving edge, forged from 250 layers of premium Damascus Steel for optimal performance. The blade has a very thin grind which allows for superior slicing both on hard and soft ingredients. This steel holds an excellent edge and resharpens with ease, and as it is a carbon Damascus the steel will etch and patina with use, adding blue, gold, and purple hues to the existing Damascus pattern with age and use. 

The handle style is inspired by a traditional octagonal Wa style handle, however I've taken inspiration and slightly adjusted some angles of the handle to make the handle taper down towards the blade to allow for slightly better indexing. Besides the comfortable grip, my favourite part of this handle is the material choice. I've featured some locally sourced Manitoba Maple Burl and infused it under vacuum with a black stabilizing resin to ensure for a lifetime of durability. Furthermore, I wanted to feature some unique materials for the bolster, and as such I went with a piece of Mammoth Tusk from northern Canada, accented with blue maple hurl. 

Note: This is a one of a kind piece, made entirely in Canada - if you place an order, you will receive the exact blade pictured. Since this is a carbon steel Damascus, it is recommended to clean quickly after use and apply mineral oil for storage to prevent rust.
