This 8" Western style Chef knife is handmade from 250 layers of High Carbon Damascus Steel. Composed of 1095 and 15N20 this blade has been given a mirror polish before cycles of etching and polishing to reveal the beautiful pattern in the steel. Although this is a random pattern Damascus, there is some additional chatoyance from a subtle ladder pattern as well, which matches well with grain of the Green Manitoba maple Burl handle. The full tang blade is 3/32" thick at the spine and has a full distal taper toward the tip for superior balance and cutting geometry.

The handle construction is a full tang with a black micarta bolster and stainless pins, with G10 liners, with green stabilized Manitoba maple burl handle. This particular block of wood came from a tree near Selkirk, Manitoba and has been stabilized in house to add durability and additional colour. The handle has been given a high polish and oiled to protect against moisture and to be as enjoyable as possible to use. In addition there is a lanyard tube in the handle so it is easy to hang up in the kitchen, and is Ferro Magnetic so it will stick to a magnet bar.

For cleaning we recommend a rinsing the blade with water and soap and completely drying the knife with a towel, and mineral oil for storage to protect against rust. Since this is a carbon Damascus blade it will etch and patina with use, so in addition to the black and polished steel pattern, with use it'll develop even more colouring, such as blue, gold, and purple in a unique way that'll reflect your own cooking style. 

We also offer a hand tooled and stitched leather sheath for storage, custom fitted to the blade to hold it snugly and for ease of use.
