This Nakiri is your perfect companion for precise slicing, dicing, and chopping vegetables.  Handmade in Winnipeg Manitoba, it's crafted from 15N20 High Carbon steel and features a very thin edge and Kurochi finish to feature the hammer marks from the hand forging process. Comfort is key; the ergonomic handle fits comfortably and ensures it stays in your hand during use. We offer a few different exotic woods for the handle, such as East Indian Rosewood and Bocote, which are durable exotics that stand up well to moisture. Each knife handle includes G10 liners for a pop of colour.

The Nakiri is a Japanese design with a flat edge and rectangular shape that is designed for techniques in order to quickly chop vegetables and excels at fast chopping due to the flat edge profile. With a bit of care to develop new techniques - particularly slicing instead of chopping, you'll quickly find this blade to speed up your cooking with the added precision of a thin blade! 

My Nakiri design is slightly thinner than other Nakiri designs, as it starts off with 1/16" stock and is slightly lighter weight with a balance point closer to the handle. Hardened to 61 HRC, it'll hold up well for durable use on any wood or plastic cutting board.  

This wood is quite durable and although they are not dishwasher safe, a light coat of mineral oil from time to time is enough to protect them from moisture and humidity changes. This knife is a great companion to the Japanese Paring Knife. 

The 15N20 High Carbon steel is perfect for durability and those that want a high grade steel that'll hold a great edge, however it does require more care than the Stainless Steel version. A light coat of mineral oil for storage helps prevent rust. Id recommend looking at the knife care section of our website to see if High Carbon Steel is right for you, but if you want a unique blade that'll etch with use then this is the knife for you!
