These 7" fillet knives are designed to be ideal for filleting fish. The AEBL High Carbon Stainless Steel has been carefully crafted and heat treated in order to achieve ideal flexibility and sharpness. AEBL is our chosen steel for fillet knives as it is a very flexible Stainless that holds a good edge, but also offers excellent rust protection.

Each knife is handmade in Manitoba, Canada, and delivered razor sharp. These knives are crafted from high quality materials with careful attention to detail, and each include a kydex sheath. These knives come with a polished satin finish and a variety of handle options.
